This Sweet Corn and Cheese Fritters is a must have. It is delightfully light, deliciously sweet and wonderfully crunchy. It’s so easy to make that you almost can’t believe it’s so good.

Fritters are a common dish in Jamaica. Saltfish fritters for something savoury and banana fritters for something sweet. Sweet Corn and Cheese fritter is a great combination of both savoury and sweet. This is a dish that can be very oily as it’s often deep fried or covered in oil. I prefer to cook it for longer in less oil to cut back but paper towels are definitely needed to soak up any excess.

Only a few simple ingredients packs a big bite for this recipe. A can of sweet corn, flour, salt, onions, scallions, pepper, a good cheese blend and oil for frying. Perfect for a good weekend brunch item or a Sunday breakfast with orange juice.

Fritters are great for breakfast but this sweet Corn and Cheese Recipe is the snack we never knew we needed. There are great dips such as pepper jelly that would create an interesting combination. It has a great balance of subtle yet seasoned flavour so a dip is not absolutely necessary to enjoy it. This recipe is easy to make and family approved.

Ingredients

  • 1/2 cup Canned Sweet Corn

  • 1 stalk scallion, chopped (Pantry Item)

  • Mexican Shredded Cheese Blend, 3/4 cup

  • Salt, 1/4 tsp. (Pantry Item)

  • Paprika, 1/4 tsp. (Pantry Item)

  • Black Powder, 1/4 tsp. (Pantry item)

  • Garlic Powder, 1/2 tsp. (Pantry Item)

  • Flour, 1/2 cup (Pantry Item)

  • Water, 1/2 cup (Pantry Item)

  • Vegetable Oil, 1/8- 1/4 cup (Pantry Item)

Directions

  • In a medium sized bowl add, flour, salt, garlic powder, black pepper, paprika and mix well.
  • Add corn, scallion and cheese and mix until covered with flour.
  • Pour water gradually and mix well until you get the consistency of a pancake batter.
  • Heat Oil in a deep pot until hot. Fry on each side for 3 minutes or until golden brown. Fry 2- 3 at a time.
