I am falling in love with food every day of life. Some days are better than others and there are the select few where everything goes right. You have a great day, great food and great conversation that makes you look forward to meals ahead. Can you tell that I love food?

Variety is the spice of life they say, so I have been mixing things up lately. Most ingredients that I buy I view them as an investment. I will likely have leftovers that will last me for many meals to come. This prospect is exciting because whenever I buy spices and herbs or general ingredients for other types of cuisines it forces me to experiment or try more new recipes. You’ll enjoy cooking and eating more for the fun it brings.

So this post is a love story. It was love from inception, sight and taste. You heard me, I loved everything about it. The rich bold colours of the pepper. The subtle cooling flavour of the avocado, the spicy flavourful bite of the chicken perfectly married with the quinoa.

This recipe was fresh, fun and fabulous. You can really make this your own. Add your favorites or substitute with what you have at home. You cant go wrong if you start off with all the things you love. The ingredients list seems a bit long but I promise its so easy. A lot of little things working together to create a hearty, tasty meal for you and your family.

Ingredients

  • Medium red, green and yellow sweet pepper, Julienned

  • Chicken Breast Tenderloin, 1.2 lbs.

  • Medium Red onion, Julienned (Pantry Item)

  • Medium Avocado

  • Vegetable oil- 2tbsp. (Pantry Item)

  • 1 Scotch bonnet pepper, minced (Pantry Item)

  • 3 cups cooked Quinoa

  • Salt 1 tsp. (Pantry Item)

  • Paprika, 1 tsp. (Pantry Item)

  • Garlic, 4 cloves minced (Pantry Item)

  • All purpose seasoning, 1 tsp. (Pantry Item)

  • 2 Tomatoes diced (Pantry Item)

  • 1/2 cup shredded Red cabbage (Pantry Item)

  • Onion powder, 1 tsp. (Pantry Item)

Directions

  • Wash chicken with lime or vinegar and drain.
  • Cut Tenderloin to thin strips, season with salt, all purpose, paprika, onion powder and scotch bonnet.
  • Heat oil on medium high in a large frying pan or skillet.
  • Stir-fry onions and garlic for 2 minutes.
  • Add chicken and Stir-fry for 10 minutes then add sweet pepper and sauté for 5 minutes.
  • Serve chicken with Quinoa, avocado, cabbage and tomato.
  • Arrange as you like and enjoy.
