Spicy Sausage & Rice One Pot. A simple must Have!

I have gone through many phases and moods during the pandemic this past year and they’ve all taken some form in my cooking.

  1. Top chef: I’ve really elevated some of my cooking by trying new ingredients or working on my skills and techniques in the kitchen. Turning out some restaurant quality meals.
  2. Lazy Days-Days where I feel I could eat a bowl of cereal all day everyday and I’ll survive just fine. Then my dairy allergy kicks in and I know I’ve gone overkill.
  3. I don’t wanna cook- The I’m so over cooking (especially doing the dishes) phase where I’m stuck on ordering takeout. If it means not washing another plate I’m ordering in.
  4. Quick Comfort Phase- The one pot quick and easy comfort phase where I still don’t want to cook but know I should eat out less. I need something that’ll only get one pot dirty and will be ready in a jiffy. This Pandemic has been an emotional roller coaster so this phase was more frequent.

During my one pot phase I wanted something simple yet flavorful so I decided to combine two of my favourite loves, jerk sausage and rice. I love using Bad Dawg Jerk sausage because it’s so flavorful and has the right amount of heat and fat to make anything yummy. To my disappointment they didn’t have it at the grocery store so I substituted but no worries it worked just as well. You can use any sausage that you love.

This dish is great for meal prep which was a life saver. I know it’ll give you the comfort and yummy goodness that it gave me.

Spicy Sausage & Rice One Pot.

This Yummy and comforting one pot has a subtle yet wonderful flavor.

Ingredients

  • 2 Links Jerk or Chorizo Sausage

  • 1 small canned corn

  • 1 1/2 cup Jasmine Rice (Pantry Item)

  • 1 medium onion chopped (Pantry Item)

  • 3 cloves garlic chopped (Pantry Item)

  • 2 tbsp. Vegetable Oil (Pantry Items)

  • 1 cup Chicken stock

  • 1 stalk scallion chopped (Pantry Item)

  • 1/4 tsp. Paprika (Pantry Item)

  • 1/4 tsp. All purpose (Pantry Item)

  • 1/4 cup water (Pantry Item)

  • Salt to Taste (Pantry Item)

Directions

  • Slice Sausage Links and heat a large pot with vegetable oil over medium heat.
  • Add onions, garlic, paprika, all purpose, sausage and sauté until the sausage is nicely brown.
  • Remove sausage and set aside. Add corn, chicken stock, water and scallion. Mix and taste before adding salt.
  • Add the rice and cook on medium to low heat until rice is cooked.
  • Once rice is cooked, transfer to a large serving bowl add the cooked sausage, mix well and serve Hot.
