I love how playful and fun this was to make. Just your unassuming afternoon trying to figure out what to eat. Decided to raid the fridge and found that I had everything I could ever need to make a really yummy dish.
I find that’s often some of my best recipes, the unplanned, no rules, no order, just winging it. It seems like there’s a lot going with all the layers and colours on but really there isn’t. Just a few ingredients with big bold flavours go a really long way.


What will you need?
This recipe is also very versatile so it’s easy to substitute based on your preference or what you have on hand. I used beef mince and kept things simple. Beef, canned corn, black beans, tomatoes, cheese and salsa verde sauce for that nice heat! I often have beef mince in the freezer because it’s easy to prepare and very flavorful. I tend to stock up on beans and corns because you never know when you might need them to pull off a meal just like I did with this recipe.

Swapping is okay. You can easily make substitutions here. If you don’t eat meat you can add fish or tuna or your seafood of preference. You can also focus on strictly beans, that could be really good too. You can try a salsa as a topping, I don’t love having raw onions but it could definitely complement this dish. You can also try sweet peppers or jalapeños or even grilled chicken. If you’re short on time and want this to go even faster you could use rotisserie chicken. That always works when I’m short for time and energy. It’s already prepared, flavorful and if not it’s easy to fix to your liking.

So all you need are the ingredients you love, the right attitude, a little mood music and you’re on your way to a delicious meal you can share with friends or family. I opted to have this all to myself and boy was I glad. I had it for dinner and the leftovers for lunch the next day. If you want to meal prep, make sure to keep the ingredients in separate containers and assemble each time you wish to have the meal. It’s as good as new every time.

Ingredients

  • Beef Mince 0.275kg

  • 1/4 cup onions, diced (Pantry Item)

  • Canned Corn

  • Black Bean, canned

  • Cheddar Cheese

  • Salsa Verde Sauce (optional)

  • Vegetable oil, 2tbsp. (Pantry Item)

  • 2 small tomatoes dices (Pantry Item)

  • Scotch Bonnet pepper diced (Pantry Item)

  • Salt, 1tsp. (Pantry Item)

  • Onion Powder, 1/2tsp. (Pantry Item)

  • Tortilla Chips, 10oz bag

  • All Purpose seasoning, 1/2tsp. (Pantry Item)

  • Soy Sauce 1tsp. (Pantry Item)

Directions

  • Heat a medium sized pan on medium heat with vegetable oil.
  • Add onions and garlic and sauté for 2 minutes or until fragrant.
  • Add beef, soy sauce, salt, all purpose, onion powder and pepper. Sauté then cover and cook for 15- 20 minutes.
  • On a plate layer chips and top with beef, corn, black beans, tomatoes, cheese. Repeat for 2 more layers.
  • Final layer top with Salsa Verde sauce.

Notes

  • Add as much topping as you like.
