All I can say is “Peanut Butter Jelly Time, Peanut butter Jelly Time”. Listen, your brunch has never looked or tasted this good. This recipe was so yummy I could have this every weekend. I really wish I could.

I love pancakes. I think I eat them more as an adult than I did as a child. Who knows, maybe I’m making up for lost time. This past year a lot of things have changed because of the pandemic. I haven’t had brunch in awhile, my friends rarely hangout because everyone is trying to be safe. So I’ve been cooking at home a lot and pancakes have been reserved for the weekends. They’re so easy to make that sometimes they even get a midweek feature.


To make being home feel a little different each day some of our best option is to elevate the simple things that we love. I’ve now started “brunching at home every Saturday” and boy is it good. The reality is though, working from home now entails balancing my 9-5 and my passion which is this blog that allows me to share different recipes that make the love of food more affordable. I rarely have time to dedicate to sprucing up my meals ‘everyday’ so the weekends are a great opportunity to do a bit more and create an experience through our food.

Rummaging through my fridge, looking for things to add to my pancakes and I noticed that I have peanut butter and jelly. Its been so rare that I have had both at the same time. So then the thought occurred to me “let’s put them together in the pancakes” and as a result I made the best pancakes I’ve ever tasted .


It’s so easy that I can’t believe I didn’t try it before. It was also so delicious, the texture is a balance between dense and fluffy. What can I say its the best of both worlds. I am not sure what I expected but it exceeded it. The peanut butter flavour with the texture of the pancake made it really filling and the jelly made it sweet and special. It was the perfect combination.

You must make these pancakes this weekend, your home brunch will thank you for it, your family will think you’re the world and your tummy will love you for the rest of your days.

Ingredients

  • 3/4 cup Pancake mix

  • 1/2- 3/4 cup water

  • 1 tbsp. softened peanut butter

  • 3 tbsp. Grape Jelly

  • Vegetable oil

Directions

  • In a bowl add pancake mix and water. Mix until smooth. The amount of water will determine the consistency.
  • Add peanut butter and mix thoroughly to ensure it spreads evenly. Batter should become light brown.
  • Add jelly (based on the texture make sure to mash the jelly before adding) and mix well.
  • In a small frying pan heat 1 tbsp., oil on medium heat. Pour about 1/2 cup of the mixture at the middle of the pot. Turn pancake when it starts to bubble and cook on the other side for roughly 1- 2 minutes or until brown.
  • Repeat the steps until batter is finished.
  • Enjoy

Notes

  • The amount of mixture will determine the size and thickness of the pancakes.
  • The pancake will absorb the oil, add more when necessary.
