Let me tell you a little story about this dish. Something so simple, light, flavourful and fun started out very complicated. In hindsight I think it was still becoming, mentally I was still feeling it out until I embraced what it was going to be. Sounds very philosophical for a popular shrimp recipe but sometimes simple is best.
First I wanted to have a spicy fajita shrimp recipe and on two separate occasions I forgot to buy the Fajita seasoning at the grocery store. There’s a fajita seasoning mix that I heard as really good and wanted to try and I just cant seem to remember it even when its on my list. On my last failed attempt at purchasing it I decided I would just improvise, make something else. I decided to do Jerk Shrimp Kebabs with Honey drizzle. Sounds nice right? Low and behold I made the kebabs, ate them all up only to realize that I forgot the honey, AGAIN! As the saying goes “when life gives you lemons”, well I make whatever it is I want. In 4 easy steps you’ll be eating delicious tender shrimp with veggies and sweet pineapples. Life in the tropics.

Step One: Preparation is key!
Prepare all your ingredients. This part is basically most of the work. Get all your items and lay them out for ease. Wash, drain and pat dry your shrimp and season with onion powder, paprika and jerk seasoning. Set aside and start cutting your onion, pineapples and veggies into wedges or little squares. You can decide the shape you want. Preheat your oven to 350 degree.
Step Two: Start the assembly line.
Here is the fun part. You can get creative with how you want to arrange the fruits, veggies and shrimp on your skewers. Once you’ve figured out an order such as red pepper, yellow pepper, green pepper, pineapple, onion, shrimp then just repeat until you have used up all the space on the skewer. Do the same for each skewer until you’re done. This is a great meal to make with little one because there is enough responsibility to give so that everyobe is participating. Be sure to create a less spicy version for them or maybe keep theirs to fruits and veggies. Line a baking tray with foil, place skewer on the tray, drizzle with olive oil and a few pepper flakes.
Step Three: Lets Bake a little!
Here is the easiest part because the hard work is all done and the oven will do the rest. Bake for 8-10 minutes uncovered for very tender and juicy shrimp. While it bakes this is the best time to clean up. If you’re like me I cant rest knowing the kitchen is in disarray and you need to eat the kebabs as soon as they’re done. So take the brief time to tidy up.
Step Four: Dig in!
Step four is the ultimate goal. You take out the kebabs, turn off your oven and transfer to a plate. The only thing left to do is dig in and enjoy. I had a couple on the skewers then decided to make a bigger meal out of it. I got a bowl, added some cooked quinoa and topped with my last skewer. I also added some Salsa Verde sauce and I was good to go. Delicious for both variations.

Jerk Shrimp Kebabs. Simple, Spicy & Sweet in 4 steps.

Ingredients
Cooked, Frozen shrimp, X-large 26-30 lb. 12 shrimp
Medium Red, Yellow, Green Sweet Pepper
Medium Onion (Pantry Item)
Pineapple Chunks
Skewers, bamboo 6-8 (Pantry Item)
Jerk Seasoning, 1tbsp (Pantry Item)
Paprika 1/2 tsp. (Pantry Item)
Onion Powder 1/2 tsp. (Pantry Item)
Directions
- Wash with lime, drain and pat dry shrimp. Season with jerk seasoning, paprika and onion powder. Mix and set aside.
- Chop Peppers, pineapple and onion to medium sized wedges or squares.
- Take a skewer and start layering your ingredients, red pepper, yellow pepper, green pepper, pineapple, onion, shrimp and repeat. Depending on the size of the skewer you should get at least 2 shrimp on each.
- Place skewers on a foil lined baking pan about half inch apart.
- Bake for 8- 10 minutes and eat immediately.
