I have been trying different recipes with beef mince. I find it very affordable and really flavourful. If you’re cooking on a budget its a good place to start. My favourite way to have it is with black beans, its so delicious. However a girl needs to change things up a bit.

So, with a pack of beef mince on hand, what should I prepare? Maybe I can add it with pasta? That immediately took me to a flashback of my childhood when I had the stomach flu. Unfortunately I associated the experience with that particular meal and its safe to say I am still traumatized so strike that.

I am not a huge fan of soup because really what’s the big deal? I find soups are filling in the moment but shortly after you’re hungry again. However, I love meatballs and I have pasta on hand so is that enough to make me enjoy it? There’s only one way to find out.

Meatball soup is not new and I am sure there are many versions or recipes for it. This is my first time making it based on what I love. Join me on this journey to making a really yummy soup.

Meatball & Pasta Soup.

Ingredients

  • Beef Mince 0.275kg

  • Beef Stock 8.5oz

  • Maggie Soup Mix 4tbsp.

  • Onion, diced 1 cup (Pantry Item)

  • Garlic, 4 cloves minced; 3 cloves whole (Pantry Item)

  • Paprika 1tsp. (Pantry Item)

  • Onion powder 1tsp. (Pantry Item)

  • Water 4 cups

  • Pimento 5 (Pantry Item)

  • Scallion, 1 stalk chopped (Pantry Item)

  • Thyme, 1 sprig (Pantry Item)

  • Bread Crumbs Panko, 1 cup (Pantry Item)

  • Egg 1 (Pantry Item)

  • Salt 1tbsp. (Pantry Item)

  • All purpose Seasoning 1/2tsp. (Pantry Item)

  • Scotch Bonnet, medium, minced (Pantry Item)

  • Soy sauce 1tsp (Pantry Item)

  • Pasta Spiral 1 cup

  • Vegetable Oil- 1 tbsp. (Pantry Item)

Directions

  • In a bowl add beef, salt, pepper, soy sauce, all purpose, paprika, onion powder, minced garlic,1/2 cup onion, scallion and mix well.
  • Add bread crumbs and egg and mix. Form into balls and set aside.
  • Heat 1 tbsp. oil in a large soup pot on medium heat. Add meatballs and brown on each side. Be gentle when turning the meatballs.
  • Add stock, water, remaining onions, garlic, soup mix, scallion and thyme.
  • Bring to a boil then reduce heat slightly and cook for 15 minutes.
  • Taste soup and add salt and pepper to taste. Add the pasta and cook until al dente.
  • Serve hot and enjoy.

Notes

  • If you want more soup add more water and adjust the salt and soup mix ratio accordingly.
