I love to cook but I don’t always feel like doing it everyday. I often meal prep for the week yet half way in I am bored. If you’re like me, then this is for your ultimate lazy day meal. Its very easy, with just a few ingredients yet still really tasty.

Its also interchangeable, if you don’t have curry chicken no problem, you can substitute with any other protein that works for you. I worked with what I had and that goes to show, you can go a long way with just a little. Feel free to play with this recipe and make it your own. Work with what you have!

Quick & Easy Leftover Curry Chicken Quesadillas

Ingredients

  • 4- 8 inch soft Tortilla

  • 1 cup mild cheddar cheese (pantry item)

  • 1 cup bell or sweet pepper julienne ( pantry item)

  • Margarine or butter ( pantry item)

Directions

  • On half a tortilla place curried chicken, top with sweet pepper and mild cheddar.
  • On medium high, heat a frying pan with 2 tbsp. margarine or butter.
  • Fold the tortilla in half and place in the skillet. Cook 2 minutes on each side or until golden brown. Be careful when flipping.
  • Repeat this process and cut each quesadilla in 2 pieces.

Notes

  • Tip: You can do a quick sauté of your choice of protein with some onions, garlic and spices to create a more cohesive flavour.
