This Corned Beef Tostadas recipe is perfect for the weekend. Whether breakfast, lunch or dinner it’s a sure way to add a little fun to your weekend. This is great as a quick breakfast with family, lunch with friends or dinner for both. Though it’s fried, it’s light, fresh, fun and crunchy. It has salty and spicy beef, the sweet corn bites topped on a crunchy tortilla.
What is a Tostada?
Tostada refers to a Mexican dish which includes a toasted tortilla. Corn tortillas are more popularly used however flour tortillas work as well which is what I used in this recipe. It is usually deep fried however I have found that just a little oil can give you a good brown and crunchy result. Once fried the tortilla becomes hard and crunchy so pick a topping that’s likely to stay on top.
How to make Corned Beef Tostadas?
Get all your ingredients ready. Corned beef, flour or corn tortillas, vegetable oil, onions, garlic, scotch bonnet pepper and canned corn. Start with the corned beef by sautéing it with the onion, garlic and pepper then add the corn to complete the mix. Set that aside and in a clean frying pan add oil, enough to almost cover the tortilla. Fry the tortilla on each side for a few minutes until golden brown. Transfer to a plate lined with paper towel and let that absorb the oil. Top each tostada with a layer of Corned beef then shredded lettuce and cabbage and drizzle with your favorite dressing. Try to eat these while hot to maximize that crunch and freshly cooked flavour.
Last year was my first time making a Tostada and I absolutely fell in love. There are quite a few variations you can try. For a breakfast Tostada you can do bacon and eggs, sausage and eggs, sausage and fried plantain, sausage and beans, eggs and avocado. For lunch and dinner you can try fish, shrimp, pulled pork, beef and beans. The list is endless.

Corned Beef Salad Tostada.

1- 198g Canned Corned Beef
1- 7oz can Mexi-corn or sweet corn
6 Flour Tortilla
4 tbsp. Vegetable Oil (Pantry Item)
1 small onion chopped (Pantry Item)
3 cloves garlic minced (Pantry Item)
1 scotch bonnet pepper minced, optional
1/2 cup shredded cabbage (Pantry Item)
1/2 cup shredded lettuce (Pantry Item)
2 tbsp. Ranch Dressing,
Directions
- Chop onions, mince garlic, shred cabbage and lettuce and set aside.
- Heat a frying pan on medium-high with 1 tbsp. vegetable oil. Add onion, pepper and garlic and sauté until fragrant. Add corned beef and sauté for 5 minutes.
- Add corn and cook for another 3 minutes then remove from heat.
- In a small frying pan heat 3 tbsp. oil on medium. Depending on the size of the pot fry 1 or 2 tortilla at a time. Fry on each side until golden brown.
- Remove tortilla from pot and rest on a paper towel.
- Mix the cabbage and lettuce together. Start layering your tortilla with the corned beef mixture and top with lettuce and cabbage. Drizzle with ranch dressing or your favourite dressing and enjoy.
