The more I cook with Quinoa the more I love it. I may officially become a quinoa lover soon. I definitely judged quinoa harshly because the truth is I love rice and quinoa paled in comparison to me. However I never really gave quinoa a fair chance and now that I have it’s so much fun to cook with.
This quinoa salad surprised me greatly. It’s so simple and fresh and a delicious burst of flavour with each bite.
This is perfect for lunch or dinner. A very quick and simple meal that’s also cost effective. It’s also excellent for meal prep so it saves on time and energy.
What are the major players you ask?
Rotisserie chicken. You can make your own chicken but I was definitely in one of those moods where I could really appreciate the ready to eat chicken from the grocery store.
Quinoa. You can work with the flavored quinoa, I know there are quite a bit of options available. I always stick to the original/ plain. Maybe one day I’ll give the others a try.
Acidity: Special appreciation for the lemon juice that goes such a long way for this dish. The zesty tangy flavour complemented the other ingredients so well.
Something sweet: This could be your favourite dried fruit. I went with raisins but you can use cranberries as well.
Vegetables: I went the simple route by using sweet peppers. They give a nice fresh and crunchy bite.
Beans and grains: My favourite is black bean because I just think you can’t go wrong with it. It brings great flavor to any dish and I added sweet corn for a pop of colour and complementary sweetness.

Citrusy Quinoa Salad with Rotisserie Chicken, you’ll love it!

Ingredients
3 cups Cooked Quinoa
1 1/2 cup chopped Rotisserie chicken breast
1/2 cup Black Beans
1/2 cup Canned sweet corn
2 Small Tomatoes pitted and diced.
1/4 cup diced sweet peppers
2 tbsp. Olive Oil (optional) (Pantry Item)
2 tbsp. Lemon Juice (Pantry Item)
2 tbsp. Raisins
1/2 tsp. Garlic Salt (Pantry Item)
Shredded 6 cheese Italian (Optional)
Directions
- Add cooked Quinoa to a large bowl( must be cool).
- Add chopped chicken, black beans, corn, tomatoes, sweet pepper, raisins and cheese.
- Add lemon juice, salt and olive oil.
- Mix well, let sit for 15 minutes then enjoy.
