Nice and Easy does it with this recipe. I find some of the best foods are unplanned. Rotisserie chicken is great because it saves on time and energy. However i find its always been hit or miss. Sometimes I’ll buy it and its really flavourful, well seasoned and just Yummy. Other time it lacks flavour and appears undercooked, no love at all. So now every time I buy it, its a gamble. Makes me feel like I am living on the edge.
I prefer leg and thigh but rarely eat it when its food that I haven’t prepared. Breast an sometimes be dry and not very flavourful. No worries though because there are a lot of options to add more flavour and life to that chicken breast. Working from home has made me more efficient and creative with the lunch preparation process. If I am not careful then the day will get away from me, not to mention the desire for something digfferent from what I had yesterday. Buy Rotisserie is great for meal prep but the meals not have to be the same.
I decided to make a chicken salad sandwich. Simple but really delicious. Just a few key ingredients and you can make this too or your version of a chicken salad. I say work with what you have and what you like.
The essentials are chicken, Mayonnaise and bread. Everything else is up to you and what your preferences are. I used Rotisserie but you don’t have to. If you have leftover chicken that works too, just debone it. I used sweet green peas because I love them. Cabbage for that extra fiber and pop of colour. Onion, salt, paprika and other great flavours will really bring this together nicely.

Rotisserie Chicken Breast 3/4 cup
Bread- 4 slices (Pantry Item)
Lettuce – 4 leaves (Pantry Item)
Mayonnaise -1tbsp. (Pantry Item)
Jerk Seasoning 1/2 tsp. (Pantry Item)
Green Peas 1/4 cup
Onion finely diced 1tsp. (Pantry item)
Paprika 1/4tsp. (Pantry item)
Butter 1tsp. (Pantry Item)
Cabbage 1 cup shredded
Directions
- In a bowl add chicken, cabbage, mayonnaise, jerk seasoning, peas, onions, paprika, butter and all purpose seasoning.
- Mix well and scoop on top of a slice of bread and a bed of lettuce. Top with another slice of bread to make your sandwich. Enjoy.
