One pots are great because of the minimal use of pots and pans. Minor clean up is always great however an additional benefit of the one pot is the marriage of flavours. Everything coming together to create a well seasoned and balanced spread of flavour. The chicken was nicely braised with that nice brown colour on the outside and tenderly cooked on the inside. Adding cubed sweet potatoes created a great combination of savoury and sweet as it cooked in the chicken gravy. For a pop of green and much needed veggies balance the fat and starch with some broccoli.
Marinating. Over night or straight to the pan?
I grew up watching my mother cook and she was a big fan of marinating in general but more so overnight. If she didn’t get the chance to marinate overnight she would at least do so for a couple of hours. Now that I do my own cooking I realize the amount of planning that went into every meal she prepared. The thought she gave to how each meal should taste while balancing everything else. It’s some serious work trying to juggle everything. I rarely find the time to marinate overnight especially during the week but I try to marinate anywhere between 30 minutes to two hours.
On the weekends though, that’s when the magic happens. A lot of planning and prepping and enough time to marinate. I marinated this chicken overnight and it really paid off in delivery really great flavour for this one pot. Chicken, Potato, Broccoli One Pot.

1 1/2 cup broccoli florets
2 Bone in Chicken Thighs
1 1/2 cup peeled and cubed sweet potatoes
1 tbsp. Soy Sauce (Pantry Item)
3 tbsp. Vegetable Oil (Pantry Item)
1/2 tsp. Garlic Powder (Pantry Item)
1/2 tsp. Onion Powder (Pantry Item)
Small Onion, chopped (Pantry Item)
4 Cloves garlic (Pantry Item)
1 tsp. Salt (Pantry Item)
1/2 tsp. Paprika (Pantry Item)
5 Pimento (Pantry Item)
Directions
- Clean chicken and rinse with water and vinegar and drain.
- Season chicken with Soy sauce, salt, pepper, onion powder and garlic powder. Mix well.
- Heat vegetable oil on medium to high heat in a non stick pan. Add chicken thighs to pot and brown on each side. Add onions and garlic to pot with 1/2 cup of water. Cover and cook for 30 minutes.
- While chicken cooks, wash and peel potatoes and cut into cubes.
- Add potatoes to pot and cook until potatoes are soft. Add broccoli and steam for 2- 3 minutes then remove from heat.
- Serve hot.
Notes
- Do not let chicken dry out or burn. Periodically top up with 1/4- 1/2 cup of water as needed.
