Cheesy Pumpkin bites are an easy and delicious snack for you and the family. Pumpkin season is in full swing and I just love when my fridge haul gives me everything I need. If you have leftover pumpkin but want to do something more than just boiling it, this is the recipe for you. Add some shredded cheese and a couple other ingredients and you’re ready to enjoy these hot, delicious and cheesy pumpkin bites.
How to make Cheesy Pumpkin Bites?
Pumpkin, shredded cheese, bread crumbs, salt and pepper for seasoning, vegetable oil for frying and an egg white for binding which is optional. I didn’t use it however a couple of the balls struggled to hold their shape.
Start by rinsing the pumpkin with water and removing the seeds and stringy bits. Cut in big squares and boil in water until cooked. Remove pumpkin and cool. Once cool scoop the pumpkin from the peel and mash the pumpkin in a bowl. Don’t mash too much. You want it to be smooth but somewhat chunky. Season the pumpkin with salt, pepper and add cheese. Use some of the breadcrumbs and mix well. Using a spoon scoop the balls to the size that you like and roll on bread crumbs until covered.
Heat oil on medium heat and carefully dip a few pumpkin balls in the pot. Turn the pumpkin balls to brown on each side. They will cook quickly so be gentle but swift as you don’t want the pumpkin balls to burn. Remove from pot and drain on a paper towel. Eat hot with your favorite sauce. I had mine with ketchup and it was delicious.
Its fun to create these delicious at home snacks instead of drawing for a bag of something processed and less filling. Making snacks at home is also a great way to bond with the entire family and create a greater appreciation for using all that we have at our disposal and giving thought to what goes in our food.

2 cups Pumpkin boiled and mashed.
1/4 cup shredded cheese
3/4 cup bread crumbs (Pantry Item)
1/2 cup Vegetable oil (Pantry Item)
1 egg white (optional)
Salt & Pepper to taste (Pantry Item)
Directions
- Take 2 cups pumpkin already boiled and mashed and add to a bowl. Then season with salt and pepper, add half of the bread crumbs and 1/4 cup cheese. Mix well. (if using egg white add now before mixing)
- Using a measuring spoon scoop the pumpkin into balls and set side.
- Heat oil on medium in a deep pot. Pour Bread crumbs in a shallow plate. Roll the pumpkin balls in the bread crumbs and place them carefully in the pot.
- They will cook quickly so gently turn them and remove when golden brown.
- Serve hot with ketchup or your favorite sauce.
Notes
- If you used egg white but its too moist then adjust with more bread crumbs.
