Beef and Tomato Stew! A bowl of simple flavour, Yes Please!

This stew was inspired by Chili but I doubt it could be considered traditional chili. If it looks like chili does that make it chili? Who knows? The only thing certain is that this stew blew my mind. It really surprised me. I thought long and hard about how I wanted to make it and I was not disappointed. I have been craving comfort food and a bowl of this seemed perfect.

I have a complicated relationship with beans and peas. I like them in certain dishes but not in most. Take red peas or kidney beans for instance. It’s a staple in Rice and Peas and stewed peas and I love those dishes. However I have no desire to have kidney beans in my non traditional chili. What’s with that?

Black beans though? I am in love with black beans, maybe it’s the flavour but it pairs well with everything for me and tastes so good so it’s safe to say the black beans would be the star in this recipe.
I wanted to keep the ingredients simple yet flavorful. So yes, it’s not the most traditional chili but this stew, I love it.

Tomato Sauce. This one is important. Pick a sauce that has a good seasoning blend because it gives the meal such a great base.
Ground beef. I go with beef mince because it has more fat and that fat is going to make this chili absolutely delectable.
Beans and corn. Black beans are a must for me. They will add a great flavour and give the chili that additional body, strengthening the meaty texture. Corn has a sweet Flavour and provides a pop of colour with a gentle crunch.
Seasonings! You can’t go wrong with a lot of garlic and onions. These will cook down and provide the most amazing aroma and flavor.
Spices all the way. The spices are key to rounding out your flavour profile. Simple yet flavourful.

This turned out to be such a fun and easy recipe that I am sure this will join my meal rotation more often. You can have it with garlic bread or rice or even quinoa or crackers. There are many ways to enjoy it and that’s what I intend to do.

Rich and Flavour bowl of Chili.

Ingredients

  • Beef Mince, 0.305kg

  • Tomato Sauce 14oz

  • Medium Onion, chopped (Pantry Item)

  • Medium Scotch Bonnet Pepper (Pantry Item)

  • Salt 1tsp. (Pantry Item)

  • Vegetable oil 2tbsp. (Pantry Item)

  • 4 cloves Garlic, minced (Pantry item)

  • All purpose Seasoning 1/2 tsp. (Pantry Item)

  • Canned sweet corn 1/2 cup

  • Black Beans 1 cup, drained and rinsed

  • Soy Sauce 1/2 tsp. (Pantry Item)

  • Sprig of Thyme (Pantry Item)

Directions

  • Add beef mince to a bowl and season with salt, pepper, all purpose seasoning and soy sauce.
  • Heat a Dutch or large soup pot on medium high heat with vegetable oil.
  • Add onions and garlic and sauté for a couple minutes. Add the beef and stir-fry until brown, make sure to break up clumps right away.
  • Add black beans, corn, tomato sauce and thyme and cook for 20 minutes.
  • Serve with Rice, side salad or garlic bread.

Notes

  • Do not let dry out, stew should be thick gravy consistency.
  • Add a tbsp. brown sugar to cut tartness (optional)
