Sheet-Pan Sausage Eggs & Potatoes are really quick and easy. This recipe will help you achieve those new year resolutions faster than you would think. Every new year we all feel renewed. A new sense of purpose and the right attitude to do things differently or improve upon some of the things we need to work on. A lot of people don’t buy into resolutions, that they don’t work. The truth is a resolution is just a firm decision to act on your goals which we all have anyway. So of course it wont work just because it’s the new year but what helps is if we can identify some small steps that can help to make our goals more attainable.
For me that includes eating healthy, on time and not skipping meals. Striking a balance between freshly prepared food yet not having the time to prepare meals everyday. Most importantly not skipping breakfast. Before the pandemic I was never keen on having breakfast but that all changed. Now if I miss breakfast I feel a downward shift in my productivity and outlook for the day. The idea is to create easy recipes that can stretch for a couple days which gives me the break I need to focus on my goals while still being nourished.
What’s in Sheet-Pan Sausage Eggs & Potatoes?
Three major ingredients round out this recipe with great texture, body and flavour. I would recommend going with a very flavourful sausage. Jerk options are really good so I went with Caribbean Passions Jerk Sausage. The jerk sausage is spicy and really flavourful. Eggs because it’s perfect with sausage and potatoes because it makes the meal very filling and absorbs the flavour of the sausage. You want to flavour everything with simple spices. Salt, paprika, garlic is all you need because the fat and flavour of the sausage will go a long way.
How to make this easy breakfast recipe?
Sheet-Pan would immediately suggest that you put it in the oven and you do. However I like to combine my flavours on the stovetop before popping them in the oven. Start by sauteing the sausage and potatoes along with the spices. The goal is to allow the potatoes time to cook half way through and absorb the flavours of the sausage and spices before going to the oven. This way they will be in the oven for only a few minutes but enough time to cook all the way through without overcooking the eggs. Once the potatoes are almost done, pour the mixture on the sheet pan and create four pockets for the eggs. Crack and pour each egg into the pockets, sprinkle with salt and red pepper flakes and bake for 5 minutes or until the eggs are cooked to your liking. I will eat a running yoke but I don’t love it all the time. A jelly yoke is a good middle ground for me.

4 Eggs (Pantry Item)
3 medium Irish Potatoes
2 Jerk Sausage Link
Salt, 1/4 tsp. (Pantry Item)
Paprika, 1/4 tsp. (Pantry Item)
Onion Powder 1/4 tsp. (Pantry Item)
Dried Thyme leaves, 1/4 tsp. (Pantry Item)
Minced Garlic 1/2 tsp. (Pantry Item)
Vegetable Oil, 1tbsp. (Pantry Item)
Red Pepper Flakes
Directions
- Wash & Peel potatoes then cut them into small cubes and rest in a bowl of water. Dice the sausage links and set aside.
- Preheat Oven to 350 degrees. On stove stop heat oil in a large frying pan on medium high. Add sausage and potatoes and sauté. Add the salt, paprika, thyme, onion powder and garlic. Continue sautéing until the potatoes are half way cooked.
- Lightly grease a sheet pan and spread sausage & potato mixture on the pan leaving space for the eggs. Crack and pour an egg into each empty space on the pan. Sprinkle with salt & Pepper and cook in the oven for 5 minutes.
- Serve with toast and enjoy!
