I have been experimenting with Tuna this last year. It’s really affordable and high in protein so it’s a good option to include affordable seafood in your diet. However, I’ve always struggled to appreciate tuna because it always tasted bland. For that reason I’ve pushed myself to buy it more often and encourage myself to get more creative with it. Tuna doesn’t come with a lot of flavour but it’s very easy to take it on.

I am happy to say that I’ve created some really delicious recipes with Tuna and a major plus is that it’s so easy to prepare. Its affordable, quick, easy and tasty? That’s a winning combination.

I go crazy for Coconut…Milk?

Coconut milk is very popular in Jamaican cooking. It’s a key ingredient in our traditional rice and peas as well as our salt mackerel rundown. It’s also a great addition to create a nice nutty yet sweet and creamy taste and texture to your stews such as curry. Coconut milk is also a good substitute for dairy products such as heavy cream or milk especially for a light pasta. It’s subtle sweet flavour is an added benefit that you don’t get from your standard heavy cream. It’s only natural that I would tie in coconut milk to bring this recipe together.

Working from home makes it hard to maintain balance and preparing meals on time so quick solutions are important. If you’re like me you’ll definitely enjoy this recipe. So let’s get cooking so we can get back to work!

Ingredients

  • 1 can Tuna

  • 1 cup Coconut Milk

  • 1 1/2 cup Fusili Pasta

  • Salt, (Pantry Item)

  • 1 tbsp. Vegetable Oil (Pantry Item)

  • Small Onion, chopped (Pantry Item)

  • 3 Cloves garlic, minced (Pantry Item)

  • 1 tsp. Red Pepper Flakes (optional)

  • 1 tbsp. Sugar (Pantry Item)

Directions

  • Boil Pasta according to package instructions.
  • Heat oil on medium in a medium sized sauce pan and sauté onions and garlic until fragrant.
  • Add Tuna and sauté for two minutes. Add Coconut milk, sugar, mix well and salt to taste.
  • Toss in pasta, mix thoroughly and sprinkle red pepper flakes on top.
