There are some really great side dishes. Side dishes don’t get the recognition they deserve. A side dish is not just complementary, sometimes its the main attraction. That’s what you get with this Salsa Verde Sweet Potato Salad.
My love for potato salad grew as I got older to my teen years, I started forming an appreciation for it. Potatoes I always loved, mashed potatoes, garlic mash potatoes with cheese and sweet potato mash. It’s only fitting that I try to elevate my palate with this Sweet Potato Salad.

Sweet and Spicy is the name of the game.

I am uncertain if the flavours vary greatly for store bought sauces. For instance, the Old El Paso sauce has quite a spicy kick however other sauces may have a mild flavour. There’s a real heat to it and a spicy herby flavour. This is a perfect combination with the sweet taste of sweet potatoes, that balance is key. That and a few other simple ingredients that you’re sure to have on hand and in no time you have a side dish to rival all others. Make a statement at the next pot kick, barbeque or just at your very own dinner table.

What do you need to make Salsa Verde Sweet potato Salad?

Just a few ingredients is all you’ll need. Start by washing your sweet potatoes. Peel them and cut in 1 inch cubes and boil until soft. Mayonnaise, butter, sugar, salt, canned sweet corn and raisins for that extra sweet bite. Try adding the creamy items first that serve as seasoning for the potato salad. The last two ingredients should be the corn and the raisins. There is no special method to follow however I find you manage the taste better when you do it this way. After that there’s nothing left to do but enjoy your bowl of sweet potato salad.

Ingredients

  • 2 cups diced and peeled sweet potato

  • 1tsp, Mayonnaise (Pantry Item)

  • Salsa Verde Sauce, 1-2 tbsp.

  • Salt, 1/2 tsp. (Pantry Item)

  • Butter, 1tsp. (Pantry Item)

  • Sweet Corn, 1/4 cup (Pantry Item)

  • Raisins, 1tbsp. (Pantry Item)

  • Sugar, 1tsp. (Pantry Item)

Directions

  • Bring a large pot of water with salt to boil. Wash and peel potatoes and cut them into cubes. Boil until cooked. 10 minutes.
  • Drain water and add potatoes to a bowl. Add butter, mayonnaise, Salsa Verde sauce and sugar. Mix well.
  • Gently mix in sweet corn and raisins. Let sit covered for 30 minutes then serve.
