I was a woman without a plan, with no idea how I wanted this to turn out or what I hoped for it to become but boy was it good. This recipe is snacking made easy. I have said it before and I will say it again, sometimes the best things are unplanned. With some leftover Jalapenos from a previous recipe, I had no idea what to do with them. From the last recipe I realized they weren’t hot at all so it would be good to just eat them. That sounded boring though, so I went to the fridge to see what I had on hand. Luckily I found my favourite bad dawg jerk sausage and some mild cheddar cheese. I don’t know about you but I am liking the sound of this flavour profile. So why not wing it and see what comes out?

What will you need?

The choice is yours about what you want to stuff them with. The sausage was it for me because of the saltiness and it would deliver the heat that the jalapenos lacked. Cheese was a must because cheese does make things better. Its such a quick and simple recipe that if you are feeling peckish its a 1, 2, 3 go. You’ll need half a sausage link, feel free to work with your favourite. Cheese, again the choice is yours. I went with mild cheddar because that’s what I had on hand and it worked really well. An egg to create the wash to dip the peppers in for coating. To be honest I wasn’t sure about this step but went full speed ahead. Breadcrumbs for coating and all purpose and onion powder spices for seasoning the sausage. Last but not least vegetable oil for frying.

Snacking made easy: How to make this recipe?

As I mentioned I winged this recipe and ended up loving it. I do however believe I may continue to play around with it to see what else might work, I may even consider baking it instead. First things first, get your jalapenos, remove the tops, cut in three parts and then pit them. Dice or crush your sausage, sauté with spices and oil for a few minutes until brown then add a little cheese to it and set aside. Here is the fun part, start stuffing your peppers with the sausage and cheese mixture, dip in egg wash and then the breadcrumbs. Fry these bad boys for a couple minutes and voila, snacking made easy!

Ingredients

  • 3 medium Jalapenos cut in 3 pieces

  • 1/ 2 Bad Dawg, jerk sausage, link

  • 1/4 cup Mild Cheddar Cheese

  • 1 Egg (Pantry Item)

  • 1/2 cup bread crumbs (Pantry item)

  • 1 cup vegetable oil. (Pantry Item)

Directions

  • Strip sausage of its casing then and finely chop. Sauté in 1tbsp oil on medium heat in a frying pan for 3-5 minutes.
  • Add cheese and mix quickly. Remove from heat and set aside.
  • Remove jalapeno stem an cut each pepper into three parts, pit and set aside.
  • In a bowl whisk egg and set aside while in a shallow plate add breadcrumbs.
  • Stuff jalapeno with sausage and cheese mixture then dip in egg mixture then coat thoroughly with breadcrumbs.
  • Heat remaining oil in a deep pot on medium- high heat.
  • Fry 2-3 pieces at a time for 3-4 minutes. Keep turning gently when each side is brown. Set on a paper towel to absorb excess oil.
  • Serve hot with mayo, Salsa Verde or your favourite sauce.

Notes

  • Be gentle when turning. The crust is very flaky.
