In honour of this Cinco De Mayo I present the Pizza Taco. I played around with a couple names like Pizzaco or Tacizza but settled on keeping it nameless. Like all good things it starts off with an idea that for reasons unbeknownst to us go completely out the window. Sometimes our deviations don’t work and other times they work beautifully.

I had the idea to make this pizza taco by using a flour tortilla as the base, topped with ground beef and other wonderful toppings but all of that changed. A friend mentioned that she bought a pizza crust mix at the supermarket and it was easy to make and delicious. She said it was better than she expected. I found this hard to believe, there are certain things that I just typically believe should be freshly made instead of a powder dough mix. Either way I trust her opinion so I decided to give it a try. Now I bought this with no intention of using it for this pizza but at the last minute decided why not? Lets take the best of both worlds. The thin crunchy and doughy crust of a pizza and the delicious toppings that you would put in your taco. And so my journey to make the Taco Pizza Started.

What I love about this recipe is that its entirely up to you. I don’t often believe in hard and fast rules about food unless its part of the fundamental makeup of the dish. I know this kind of wild thinking isn’t practical for baking so thank God that is not my strength :). I say add what you love, what gets you excited about food because we have no one to impress, only our stomach and it wants to thank us so much.

For weeks I thought about this and wanted to use ground beef. I could visualize it enough to taste it, to see how well the flavours would complement. In the end I went with chicken instead. For no good reason other than I was lazy to prepare the beef when I already had leftover chicken in the fridge. The good thing is you’re allowed to change your mind as much as you want. Ground beef, rotisserie chicken, baked chicken, sausage, shrimp, barbeque chicken even fried chicken can work if that’s what you prefer or what you have on hand. I would recommend making it meaty for the chicken options so that you have a piece in every bite, yes please!

So some of my favorites for my tacos are corn, I just love the sweet crunchy bite that sweet corn gives. Then your additional freshness, sweet peppers and tomatoes, they provide crunchy and moist bites. Lets not forget the heat though with slices of jalapeno peppers, bring on the heat! Then top it all off with cheddar cheese. I like cheddar cheese. I believe there are other cheeses that my better pair with your choice of meat but again its based on your preference so feel free to swap. Another topping that’s flexible is the sauce. I decided to use the taco sauce instead of pizza sauce and it was so saucy, so good.

Its all about the Extras!

So here’s an additional unexpected but fun element to this recipe. Maybe we have settled on everything we want to top the pizza with but that doesn’t mean we cant eat more right? Consider eating this with guacamole, salsa, cheese sauce or refried beans. You can spoon it on each slice while you eat or dip that slice in a bowl of yum. You decide but guacamole it is for me.

How to make the Pizza Taco?

As I mentioned I bought a Betty Crocker pizza crust mix. If you decide to do the same or use another brand then start off by following their package instructions from preheating the oven to preparing the dough. This was my first time pressing dough to make a large circular shape. It was not as easy as I thought it would be or the packaging implied, nonetheless I made it through. Start by saucing that bad boy and get a good mount on it. Then add the chicken, corn, peppers, tomatoes, jalapenos and then top with cheese. I know for pizzas you typically start by adding the sauce then cheese however I was going the way of the taco and I wanted to maintain the moisture of the chicken breast (very lean) and adding the cheese last will help with that. Then its the pizzas time to shine.

Nice thin crust of a Pizza topped with delicious taco toppings.

Ingredients

  • Betty Crocker Pizza Crust Pouch, 184g

  • Cooked Jerk Chicken Breast 1- 1/2 cup

  • Canned Sweet Corn 1/4 cup

  • Taco or Pizza Sauce 1/2-3/4cup

  • Cheddar Cheese 1/2- 1 cup

  • Medium, Green sweet pepper, diced (Pantry Item)

  • Small tomato, 1 diced (Pantry Item)

  • 1 Jalapeno sliced

  • Red Pepper Flakes 1tsp. (Pantry Item)

Directions

  • Preheat oven, prepare pan and pizza crust according to package instructions.
  • Top with Taco/Pizza Sauce, chicken, corn, sweet pepper, tomatoes, jalapenos and cheddar cheese.
  • Bake according to package instructions or until crust is golden brown. I baked for 15 minutes.
  • Serve immediately and top with your favourite extra.
