Tacos Tacos Tacos! Who doesn’t love Tacos? The two stars of this recipe are the fish and that zesty ranch. Turn your Friday night at home to a real party. Pair with a pitcher of margaritas or sangria and make it a weekend of fun, food and laughter with your friends or family.

The last few months I have been slowly but surely incorporating more seafood into my diet. Strangely as an islander I don’t consume as much fish as people would think. That’s probably some food for thought. Either way I am on a journey to have a better balanced diet so seafood it is.

I think its safe to say that when you think of fish, zesty comes to mind because that acidity goes a long way. I came across some different Old El Paso sauces in the supermarket and with Fish Tacos in mind the zesty Ranch immeditaly popped out. Why not make a slaw?

Beats just adding veggies to my tacos, lets give those veggies a little personality. I thought a lot about how I was going to make this dish, what ingredients I would use, how could I make this very flavourful and really come alive? I imagined very fresh and bright colours. I could see it in my minds eye before I made it. I think that’s usually how most of my best meals start. Its like a guide throughout the cooking process.

I must say having this blog is teaching me to document the process better because usually I just cook with the flow, no recipes or measurements but if I don’t document it then how can I share this love with you? With that said, trying to pencil it down is a challenge but I think I am getting the hang of it.

So lets get the weekend started, I am sharing this meal with my bubble of friends, whoever you share it with, a great meal and great company is always a great time.

Fish Tacos with Zesty Ranch Slaw. So fresh, so good.

Fresh and Zesty Fish Tacos

Ingredients

  • 3 Rainforest Butter fish fillet (cut in 1/2)

  • 1 cup Flour (Pantry Item)

  • 1 cup Italian Herb Panko Bread Crumbs

  • 1 egg (Pantry Item)

  • 1 1/2 tsp. Salt (Pantry Item)

  • 1 tsp. All Purpose Seasoning (Pantry Item)

  • 1- 2 cups vegetable oil (Pantry Item)

  • 2 cups red cabbage shredded

  • 2- 3 tbsp. Old El Paso Zesty Ranch sauce

  • 1/4 cup grated carrot (Pantry Item)

  • Red Onion optional

  • 6″ flour Tortilla

  • 1 lemon or juice

  • 2 cups shredded lettuce (Pantry Item)

  • 1/2 tsp. onion powder(Pantry Item)

Directions

  • Scale and wash your fish with lime juice and pat dry thoroughly. Season with 1 tsp. salt, onion powder and 1/2 tsp. all purpose.
  • In a shallow bowl mix flour, 1/2 tsp. salt and 1/2 tsp. all purpose seasoning. In a separate bowl whisk egg and add breadcrumbs to a separate shallow bowl or bag for efficiency.
  • In a deep frying pan heat oil until hot. Meanwhile dip each piece of fish one by one in the flour mixture, transfer to the egg mixture and then to the breadcrumbs.
  • When the oil is ready add the fish to the pot and cook on each side for 5 minutes or until golden brown. Do this in batches.
  • In a bowl add shredded cabbage, lettuce, carrot, onion and zesty ranch and mix well. Add salt if necessary.
  • Toast Tortillas in a pan for 1- 2 minutes on each side
  • Add slaw to the tortilla and top with the fish. Squeeze lemon juice on top and enjoy.

Notes

  • I use a wooden spoon to test if my oil is hot enough to fry. If you add the spoon tot he oil and it immediately forms bubbles then its ready.
  • Do not over crowd the pot, you want the fish to cook evenly. I did 2 fillets at a time. Depending on the size of your pot you can decide the number of batches.
